The word terroir describes how soil, climate, and craftsmanship shape the character of a food. Especially with heirloom and regional varieties, such as those preserved by ARCHE NOAH, one can clearly see how strongly plants respond to their location and how this diversity enriches the flavor.


ARCHE NOAH & Philipp Lammer: Developing Diversity

ARCHE NOAH has been committed to preserving and developing crop diversity for decades. The "Seed Carriers" working group brings together farmers, gardeners, and researchers like Philipp Lammer to collaborate on varieties for small-scale vegetable farms—often species that play little role in industrial cultivation but have enormous potential for the future.

Seed-bearer project: Asparagus salad in focus

A highlight of this year's project is ARCHE NOAH's collaboration with market gardeners on the variety of asparagus salads—also known as wosun or celtuce. The goal is to develop the best varieties of this vegetable, still little known in this country, for European organic cultivation. Within the framework of the project, various asparagus salad varieties will be systematically cultivated, selected, and tested for their suitability for organic cultivation. This will enrich not only the diversity in the field but also on the plate, rediscovering a piece of the terroir.
